Oct. 1st, 2009 12:09 pm So yesterday i experimented with turkey legs (which incidently are quite inexpensive). I smoked them for 4 hours over apricot wood, then boiled them in sprite and onions for another 30 mins. After that i sprinkled them with salt and garlic pepper and glazed them with a honey dijon mustard mixture and grilled for 15 minutes. They turned out quite nicely with a sweet smokey flavor.
Next i think i need to find some turkey wings and try using them for hot wings.
Oh and while i had the smoker up and running I smoked a pound of ground pork for two hours. going to try it in lasagna with homemade noodles, i think.
