 So yesterday i experimented with turkey legs (which incidently are quite inexpensive). I smoked them for 4 hours over apricot wood, then boiled them in sprite and onions for another 30 mins. After that i sprinkled them with salt and garlic pepper and glazed them with a honey dijon mustard mixture and grilled for 15 minutes. They turned out quite nicely with a sweet smokey flavor. 

Next i think i need to find some turkey wings and try using them for hot wings.

Oh and while i had the smoker up and running I smoked a pound of ground pork for two hours. going to try it in lasagna with homemade noodles, i think.

so, visited the big asian market again on Saturday. Bought more coconut milk and seaweed (nuri) and two pounds of smelt out of curiosity.

I cleaned the smelt and put a piece of tinfoil down on the grill and attempted to grill them. If you should try this i would recomend oiling the tinfoil. The fish stuck to the tinfoil and i had to scrape  them off and ended with a big plate of fish bits instead of the crispy tiney fish that the guy ion the internet described. In addition i didn't find the flavor particularly pleasant. All in all a dissapointing end to several hours of work. We ended going out for burgers.

Next time i get the urge to grill fish, i think i'll just buy a catfish.
