 So yesterday i experimented with turkey legs (which incidently are quite inexpensive). I smoked them for 4 hours over apricot wood, then boiled them in sprite and onions for another 30 mins. After that i sprinkled them with salt and garlic pepper and glazed them with a honey dijon mustard mixture and grilled for 15 minutes. They turned out quite nicely with a sweet smokey flavor. 

Next i think i need to find some turkey wings and try using them for hot wings.

Oh and while i had the smoker up and running I smoked a pound of ground pork for two hours. going to try it in lasagna with homemade noodles, i think.

 Pulled out the old icecream maker again today and made probably the best batch so far. I started with my standard vanilla recipe then i added about 30 - 40 ozs of finely (and I mean blender pureed fine) fresh mint leaves, added the zest from one whole orange, and the juice from half of said orange. This wasn't just damn good icecream, it was dayum good icecream. 

In other projects I've managed to make a ceramic smoker a'la Alton Brown, Instructions found here.... http://www.youtube.com/watch?v=_Ka2kpzTAL8 . I tried smoking a couple of pans of meatloaf however it never seemed to get hot enough to cook them. I ended up finishing them up in the oven. They did have a decent but subtle smoky flavor. I'll be experimenting more with smoking in the future.

 I want to open a small diner or cafe on a tiny budget but I don't know how or when. Or even cook for someone who is. If anyone has any thoughts or ideas, i'd welcome them.
